Dhaba Style Mix Veg, Garnished with Grated cheese

Ingredients (Serves 3-4)

  • 200 gms beans, chopped

  • 1 cup peas

  • 1½ potatoes, chopped

  • 1 capsicum, chopped

  • 250 gms carrot, chopped

  • 1 medium cauliflower (cut into small florets)

  • 5-6 tbsp vegetable oil

  • 2 tomatoes (made into a paste)

  • 100 gms paneer (cottage cheese)

  • 2 tsp coriander powder

  • 1 tsp red chili powder (adjust to taste)

  • 1 bay leaf

  • 1 tsp turmeric powder

  • 2 tsp ginger paste

  • 1 tsp dry ginger powder

  • 1 tsp cumin seeds

  • 2-3 tbsp coriander leaves, finely chopped

  • 2 tbsp curd/yogurt

  • 2 green chilies, chopped

  • Salt to taste

  • 1 tsp garam masala

  • ½ tsp asafoetida (hing)


Cooking Instructions

Step 1

Heat 4-5 tbsp oil in a pan. Add all the chopped veggies - Carrot, Cauliflower, beans and potatoes and begin to fry them. Fry them till they are cooked completely and golden from the edges.

Step 2

Then Fry Capsicum for 1-2 mins in another batch. If you don't want to fry, you can steam the veggies. Once this is done, take out the veggies in a separate bowl.


Step 3

In the same oil, add cumin seeds, asafoetida, green chillies and sauté for them for 1-2 mins. Now add bay leave. Stir. Add tomato paste, sauté till you see oil releasing from the sides. Add ginger paste. Mix it well.


Step 4

Add all the spices, stir well. Lower the flame and add 2 tbsp of curd, stir it well. Add or sprinkle some water to the gravy.

Step 5

Now add the fried veggies to this gravy. Add salt, paneer cubes. Mix it well. Cover the lid and let it cook for few seconds. Sabzi is ready

.

Step 6

Serve hot with Chapati, Salad, Curd or Pickle.
