2 Cup Besan/Gram Flour
1/2 cup+ 1 tbsp Ghee
3/4 Cup Sugar
1/2 Cup Water
1 1/2 tsp Cardamom Powder
1/4 Cup Less than Mawa (optional)
as required Chopped Pistachios
as required Chopped Almonds
as required Kesar/Saffron
as required Orange Food Color
As needed- Oil or Ghee for applying
Cooking Instructions
Step 1
Firstly in a mixing bowl, add 2 cup of Besan and sieve it for 2 times.
Step 2
Melt ghee in a kadhai on medium low heat. Add the sieved Besan in kadhai, now keep the flame at low.
Step 3
Keep stirring the Besan, it will get sticky too, but keep stirring it continuously as the Besan will start to loosen up. Roast until it turns Golden in color and become smooth.
Step 4
Add mawa in cooked Besan mixture, mix it well. Let it cool down slightly.
Step 5
Meanwhile heat a separate pan, add 3/4 cup of Sugar and 1/2 cup of Water. Let the Sugar dissolve, add saffron, Cardamom powder, food color. Make a sugar syrup. Don't overcook it.
Step 6
Once the mixture becomes little cool, then add hot sugar syrup in cooked Besan. Quickly add chopped almonds and mix well.
Step 7
Now grease oil on plate. Transfer and set the mixture with the help of spatula and sprinkle almonds and pistachios. Let the burfi set for at least an hour and then cut into pieces (square).
Step 8
Cut into square pieces. As shown in the images.
Step 9
You can Store these at room temperature for 8-10 days. So Delicious Besan Burfi is ready to eat.
