Ingredients (Serves 2 | Prep time: 20-25 minutes)
1½ tbsp vegetable oil
1-1½ cup roasted vermicelli (seviyan)
½ cup peanuts
1 capsicum, finely chopped
1½ carrot, finely chopped or grated
2 tomatoes, chopped or grated
1-2 green chillies, chopped
1 tsp red chilli powder
½ tsp black pepper powder
Salt to taste
2 tbsp tomato ketchup
1 tbsp soy sauce
2 tsp vinegar
3 cups water
Cooking Instructions
Step 1
Heat Oil in a pan on medium flame. Sauté peanuts for 2 mins and keep it aside. Put some salt on peanuts (while they are hot).
Step 2
In a separate pan, Add a pinch of salt and 1/2 tsp of oil. Boil vermicelli for few minutes.
Step 3
In the same pan. Add some oil (if required). Add tomatoes, salt and green chillies, stir it for a while.
Step 4
Add chopped veggies. Mix them well. You can keep cooking them on low flame. This should take only a minute or two.
Step 5
Add Red Chilli Powder and black Pepper Powder. Mix well.
Step 6
Add boiled Vermicelli, tomato ketchup, vinegar, soy sauce and mix well. Add salt (if required)
Step 7
Toss well. Add Peanuts and it's ready. Serve hot.
